Tasty Mediterranean Style Chickpea Salad

A more filling salad with chickpeas, this Mediterranean style dish is bursting with flavour from the lemon and parsley vinaigrette. This is a colourful salad which is perfect for enjoying outside in the sunshine.

Takes: 10 minutes

  • FOR THE SALAD:
  • 1/2 c. chopped kalamata olives
  • 1/2 c. crumbled feta
  • Kosher salt
  • 2 (15-oz.) cans of chickpeas, drained and rinsed
  • 1 medium cucumber, chopped
  • 1/2 red onion, thinly sliced
  • 1 bell pepper, chopped
  • Freshly ground black pepper
  • LEMON PARSLEY VINAIGRETTE:
  • 1/4 c. white wine vinegar
  • 1/2 c. extra-virgin olive oil
  • Freshly ground black pepper
  • 1 tbsp. lemon juice
  • 1 tbsp. freshly chopped parsley
  • 1/4 tsp. red pepper flakes
  • Kosher salt

In a large bowl mix together the chickpeas, cucumber, red onion, olives, bell pepper, and feta. Season with salt and pepper.

Using a jar with the lid screwed on, shake together vinegar, olive oil, lemon juice, parsley, and red pepper flakes, Season with salt and pepper.

You can then dress the salad with vinaigrette and serve.
