Summer Salad Bites and Rainbow Bowl with Avocado Wing Man Dressing (Vegan, Gluten-Free)

A delightful array of colourful vegetables make up this delicately sliced and delicious salad. The dressing combines the creaminess of avocado with a little zestiness to bring out the flavours of the seasonal mix.

Takes: 50 minutes

  • Bowl and Bites Ingredients:
  • 1-3 cucumbers, sliced thinly length-wise
  • 1 pack tofu, baked
  • 1 purple cabbage, shredded
  • 2 Ontario zucchini, spiralized or thinly sliced
  • 1 radish, thinly sliced into disks
  • Large handful of arugula
  • Small Ontario tomato, diced
  • 1 cob of corn, grilled
  • Dressing Ingredients:
  • 1 ripe avocado
  • 1 clove garlic
  • 1 tbs Wing Man
  • Juice of half a lemon
  • 1-2 tbs water
  • Salt and pepper, to taste

Begin the Great Veggie Prep! Carefully wash your produce haul, and begin slicing and dicing. We used a spiralizer to get our zucchini into photogenic noodles, and a mandoline to slice our cucumber thinly along its length. If using a mandoline, please exercise care and caution to avoid kitchen injury. Careful knife work will do the trick if you are without such tools, or intimidated by gadgets.

If using tofu, slice into thin strips or cubes and bake at 400F for about 35 minutes. If using corn, boil or barbecue your cob, then de-cob the corn. Feel free to add whatever other produce your heart desires. Set all ingredients aside.

Prepare your dressing by mixing together all ingredients in your blender until smooth. Transfer the mixture to a Ziplock bag and cut a hole in the corner when you are ready to use.

Assemble your Salad Bites! Lay your thin cucumber slices out on a clean countertop or cutting board. Top each with a small sprinkling of tofu, cabbage, zucchini, radish, tomato, arugula, and corn. Get as many ingredients in there as you can, but avoid overloading, then top each with a generous piping of your dressing.

Roll your cucumbers into sushi-like bites. The dressing should act as a binding and keep your bites together, but some toothpicks will also help if you find your bites seem inclined to unfurling themselves.

After you have assembled (and consumed) as many bites as you desire, add all the remaining produce to a large salad bowl and top with leftover dressing. Add pumpkin seeds or nuts as garnish. Voilà, a Rainbow Bowl.
