Quick Oven Grilled Chicken with Caesar Salad

A quick turn in the microwave keeps chicken breasts moist and speeds up this weeknight meal that can be finished on the cooktop in one pan. Homemade Caesar dressing is great but try the bottled stuff thinned out with a bit of lemon.

Takes: 20 minutes

  • 2 skinless chicken breasts
  • 1 tsp grapeseed oil
  • 4 tbsp cider vinegar
  • 1 tsp paprika
  • 2 tsp dried oregano
  • 1 tsp ground cumin
  • 1/4 cup grated Parmesan cheese
  • Pinch cayenne
  • 2 tbsp water
  • 1 cup cherry tomatoes
  • Romaine lettuce
  • Garlic Parmesan croutons
  • Bottled Caesar dressing

Place chicken breasts on a plate covered with a second plate.

Mix together grapeseed oil, vinegar, paprika, oregano, cumin, cayenne and water and pour half over chicken turning chicken once to coat. Pour remaining half into a glass jar for dressing. Microwave for 5 minutes while you warm grill pan.

Lift microwaved chicken from plate (leaving juices behind)and place breasts directly on the grill. Cook through until no longer pink. Test with a meat thermometer that it reaches 1650 F.

Prepare salad greens in a bowl and top with croutons and dressing.
