Iced Ginger Peach and Mint Tea

This refreshing iced tea packs a punch even though it’s caffeine-free. Add fresh ginger root for a hit of flavour.

Takes: 30 minutes

  • 4 bags herbal tea - ginger peach
  • 8 slices fresh ginger root (peel on)
  • 1/2 cup (125 mL) loosely packed fresh thyme leaves
  • 1/3 cup (75 mL) granulated sugar
  • 6 cups (1.5 L) water

Place tea, peach, ginger, thyme, and sugar in heatproof container. Reduce the amount of sugar if you prefer a less sweet iced tea. Bring water to a boil; pour over tea mixture. Allow tea to steep for 10 minutes.

Strain into large serving pitcher. Chill for 3 hours or overnight. Serve in tall glasses over ice, garnished with additional mint if desired.
