Gourmet Grilled Cheese with Kale and Apple Salad

Just because something is simple, doesn’t mean it can’t be great! Same old, same old can become gourmet with the addition of a few twists. Here the grilled cheese gets thinly sliced apple and avocado with Havarti but you could go for Asiago and fresh baby spinach…

Takes: 10 minutes

  • *Kale and Apple Salad
  • I bunch of kale, chopped
  • 1/2 apple, julienned
  • Handful of cherry tomatoes
  • 2 tbsp crushed cashews
  • *Dressing
  • 2 tbsp extra virgin olive oil
  • 2 tbsp maple syrup
  • 2 tbsp fresh lemon juice
  • 1 tbsp sweet with heat mustard
  • Salt and Pepper
  • *Grilled Cheese
  • Havarti and Swiss cheese, 4 slices of cheese per person
  • 2 tbsp butter
  • 1/2 apple, thinly sliced
  • 1/2 avocado, thinly sliced
  • 4 slices of sourdough bread

In a large salad bowl combine chopped kale with apples, cherry tomatoes and cashews.  Mix together olive oil, maple syrup, lemon juice and mustard. Store in fridge until ready to serve.

Warm grill pan over medium high heat while you butter both sides of bread. Toast bread on one side and then flip and layer cheese slices, apples and avocado. Lay cheese onto the other slice of bread and press together with a spatula to crisp but flip only once.
