Crisped Salmon with Mango Relish

This salmon gets charred on the outside and stays moist on the inside. Master this simple technique and a variety of different flavours and textures will delight your taste buds.

  • 1 lb slab of salmon
  • Sweet with heath mustard
  • Mango
  • Red onion
  • Red/yellow pepper
  • Cilantro
  • Garlic
  • Lemon
  • Olive oil
  • Salt
  • Pepper

Preheat oven on broil.

Season the salmon with sweet with heat mustard, salt and pepper and place in oven for 22 minutes. WARNING – the fish will smoke and should get blackened on the top.

Dice mango, red onion, red/yellow pepper, cilantro and garlic and place in mixing bowl. Add olive oil, lemon, salt and pepper and a touch of hot sauce to dress the mango relish.

Pull salmon out of the oven, plate and add mango relish on top.
