Bacon Penne A la Vodka for a Crowd

Everyone loves bacon and pasta and this dish is always a hit! Easy to whip up and serve at the table.

Makes: 6 servings

Takes: 20 minutes

  • 1 tbsp butter or extra virgin olive oil
  • 1/2 onion, chopped
  • 2 cloves garlic, minced
  • 2 tomatoes diced
  • 1 small can of tomato paste
  • 1/ 2 cup heavy cream (35% MF)
  • 1/4 cup vodka
  • 2 tbsp butter
  • 6 cups penne rigate
  • 5 fresh basil leaves, sliced
  • Freshly grated parmesan cheese
  • 2 strips cooked bacon, chopped
  • 1 tsp of chilli flakes (optional)

Bring a pot of salted water to the boil for penne.

In a large skillet, fry onion for 7 minutes in butter. Add garlic and cook for 30 seconds and then add diced tomatoes and tomato paste. Stir in heavy cream and bring to a boil. Stir in vodka and let cook until the alcohol dissipates. Drain pasta and toss together. Top with fresh basil, Parmesan cheese, hot chili flakes if using and cooked bacon to taste.
